Hu` Tieu

Hu`Tieu one of the staples soups in Vietnam, alone with her cousin Pho.  Both are basically a noodle soup made with egg, tapioca (crystals) or rice noodles.  Or a combination of those.  The main ingredient is the broth, that is made by roasting and boiling the beef bones or seafood carcases.
